Put a fruity twist on classic pancakes!
What You Need
- ½ cup freshly grated apple
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 mashed banana
- 1 cup buttermilk
- 1 egg
- 1 cup flour
- 2 tablespoons vegetable oil
- ½ teaspoon salt
- 1 tablespoon sugar
- 2 mixing bowls
What You Do
- In one bowl, mix the egg, buttermilk and oil. In the second bowl, blend the flour, sugar, baking powder, baking soda, and salt.
- Pour the dry ingredients into the first bowl and stir until blended. It’s OK for the batter to be somewhat lumpy. Fold in the apple and banana.
- Melt some butter or margarine in a pan or griddle. (The secret to making pancakes is to get the griddle hot enough without burning the grease.) Once the pan is hot, add a few spoons full of batter. Flip the pancakes when bubbles start to appear on top.
- Serve with butter and warmed maple syrup.
