One bite and you’ll be hooked on these delicious fish cakes made with tuna and mashed potatoes.
What You Need
- 4-5 oz. breadcrumbs
- Corn oil for shallow frying
- All-purpose flour
- Lemon
- 2 cups mashed potatoes
- Peas
- 1 can “light” tuna in water, drained
What You Do
- Combine Potatoes, Tuna, and Breadcrumbs
Combine mashed potatoes, light tuna, and breadcrumbs in a large mixing bowl. Place the bowl in the refrigerator for 30 minutes. - Divide Mixture into Balls
Divide the mixture into small balls (about 1/2 cup for each ball). Roll each ball in the flour. - Shape Balls into Fish
Shape each ball into a fish shape. Flatten the fish with your fingers. - Fry Fish
Have an adult fry each fish cake on medium heat until golden brown. - Add Pea and Serve
Insert a pea in each fish cake for an eye. Serve each fish cake in a sea of peas with a lemon slice sun.
