Make Pumpkin Pancakes

“Gourd” morning! This pumpkin-packed breakfast is a tasty way to start your day.

PANCAKE RECIPE

What You Need

  • ½ cup canned pumpkin
  •  ¾ cup milk
  •  1 egg
  •  2 tablespoons maple syrup
  •  ½ teaspoon vanilla
  •  1 teaspoon oil (plus extra for the griddle)
  •  1 cup flour
  •  2 teaspoons baking powder
  •  ¼ teaspoon cinnamon

What You Do

  1.  Mix the pumpkin, milk, egg, maple syrup, vanilla, and oil in a large bowl.
  2.  Add the flour, baking powder, and cinnamon to the wet ingredients, and stir until combined.
  3.  For each pancake, drop about ¼ cup of the batter onto a lightly oiled griddle or pan on medium heat. (Ask an adult for help.)
  4.  Flip the pancake when bubbles start to appear on the top. Cook until golden brown on the other side.

Makes 8 pancakes

JACK-O’-LANTERN PANCAKE

What You Need

  • two pancakes
  • nut butter, syrup, or jelly
  • slice of green apple
  • jack-o’-lantern cookie cutter (optional)

What You Do

  1. Spread a layer of nut butter, syrup, or jelly on one pancake.
  2. Use a cookie cutter or knife to create a jack-o’-lantern face in the second pancake. (Ask an adult for help.) Place the finished face on top of the first pancake.
  3. For the stem, add a slice of green apple, as shown.

SPIDER WEB PANCAKE

What You Need

  • one pancake
  • chocolate nut spread or melted chocolate
  • two blueberries
  • shredded coconut
  • small squeeze bottle

What You Do

  1. Spoon the nut spread or melted chocolate into your bottle. Squeeze the chocolate onto the pancake, “drawing” a spider web design, as shown.
  2. To create a spider, “glue” two blueberries together with the chocolate and place on the web. Add shredded coconut to make legs.
